The 2020 Burrowing Owl Vineyards Sauvignon Blanc growing season presented both challenges and opportunities, resulting in grapes of exceptional quality. Harvested by hand in October from our vineyard in Keremeos, these grapes were meticulously sorted to ensure only the finest fruit was used. The gentle extraction of the juice in our pneumatic press preserved its integrity.
Winemaking mastery shines through in the careful fermentation and aging process. A portion of the juice was fermented and aged in a selection of new and old French oak barrels for eight months, resulting in the development of a rich mouthfeel and enticing woodsy, toasty, and spicy undertones. The remaining juice was fermented and aged in tanks, highlighting the delicate and fresh fruity flavors. After the blending, filtering, and cold-stabilization process, the wine was bottled in July 2021, ready to be enjoyed.
