Strathcona Spirits Pedro’s Dreamland Whisky is a meticulously crafted Canadian whisky that blends 85 % wheat and 15 % rye, aged for four years: first in virgin American quarter-oak casks for approximately 2.5 years, then finished in Pedro Ximénez sherry casks from southern Spain for 1.5 years.
Tasting Notes:
Nose: Grain-forward aromas of hard wheat and light rye spice followed by hints of cherry pie, sponge toffee and subtle chocolate-nut bar.
Palate: Smooth and layered with notes of orange-vanilla cream, dried dark fruits (prunes, raisins) and toasted oak, balanced by the underlying wheat-berry sweetness and rye dryness.
Finish: Medium to long, with lingering chocolate-caramel tones, soft rye pop, and a delicate cinnamon-clove spice that fades gently.
