Only grapes from pre-selected premium sectors are used, ensuring the utmost quality. The grapes are carefully hand-picked from March 21st to 25th, undergo hand sorting both before and after destemming, and benefit from a pre-fermentative maceration for 6 days at 6ºC.
The alcoholic fermentation takes place in stainless steel tanks over 10 days at controlled temperatures of 25ºC to 28ºC. Following this, a post-fermentative maceration occurs for 10 to 12 days, depending on daily tastings. The wine is then transferred to French oak barrels for malolactic fermentation, with 80% of the wine aged for 12 months in these barrels and the remaining 20% in stainless steel tanks.
